A LITTLE ABOUT US

At BE Catering, we care about what we do. We care about where our food comes from and how it was grown or raised. We are proud to run Peterborough’s most dynamic, innovative and award-winning catering company. With our extensive experience in all avenues of cooking, serving, bartending and event planning, we strive to make every event a success, big or small. Whenever humanly possible, we use produce from local and organic farmers for seasonal veggies and meat. We also make everything ourselves, including rustic breads and pastries. Since establishing BE Catering in 1998, we have catered many events, some as large as 750 people! We’ve even had the prestigious honour of cooking for Molly Johnston and Stephen Lewis. While we enjoy working with large events, we are also available to cater small private parties. We’ve served up fabulous meals at cottages in the Kawarthas, and catered weddings and other social events.

EMPIRE AGED CHEDDAR CRACKERS

We like to serve these with a Spicy Red Pepper Jelly available at the local Farmers market.

INSTRUCTIONS
With an electric mixer, cream butter. Stir in grated cheeses. In a separate bowl, mix flour, cayenne and salt. Add cheese mixture and mix well. Knead mixture a few times on lightly floured board, and divide in four. Roll one piece out to about 1/8 inch thick, making sure there is enough flour to release dough from work surface. Cut into shapes and place on parchment paper. When sheet is full, brush with beaten egg mixture, sprinkle with chopped walnuts and bake. Makes about 8 dozen.
INGREDIENTS
  • ½ cup Stirling butter
  • 2 cups grated Empire Old Cheddar
  • ½ cup grated parmesan cheese (or Parrano!)
  • 1 cup all purpose flour
  • ½ tsp cayenne pepper
  • ½ tsp salt
  • 1 Kawartha Choice FarmFresh egg, beaten
  • ½ cup finely chopped walnuts (optional)
