Chefs Dan Leonard and Stefan Bruchmann use fresh, quality local ingredients to produce the restaurant’s signature baking, stocks, sauces and food creations. A graduate of Georgian College Culinary Management Program, Chef Dan Leonard’s culinary experience spans over 20 years in various dining establishments in Ottawa. German born and trained, Chef Stefan Bruchmann has traveled extensively in Ireland, New Zealand and Australia, enriching his culinary skills, his passion for discovering, learning, and adapting international cooking styles.

CREAMY GINGERED PARSNIP SOUP
Using a hand blender, puree until smooth. Add 35% cream and continue to simmer for 5 minutes. Season with salt and pepper to taste.
Soup may be garnished with chopped parsley, chives or fresh chopped thyme.
- 2 tbsp olive oil
- 11⁄2 lbs peeled, coarse chopped parsnips
- 1 large spanish onion
- 3 cloves garlic, coarsely chopped
- 4 tbsp chopped fresh ginger
- 1 large potato, coarsely chopped
- 4 tbsp butter
- 3 cup chicken broth
- 11⁄2 cup 35% cream
- Salt and pepper to taste
