A graduate of Georgian College Culinary Management Program, Chef Dan Leonard’s culinary experience spans over 20 years in various dining establishments in Ottawa. German born and trained, Chef Stefan Bruchmann has traveled extensively in Ireland, New Zealand and Australia, enriching his culinary skills, his passion for discovering, learning, and adapting international cooking styles.

CREAMY GINGERED PARSNIP SOUP
INSTRUCTIONS
Heat oil over medium-high heat in a pot large enough to hold all the ingredients. Add parsnips, onion, garlic, ginger and potato, stir frequently until translucent, 7-8 minutes. Add butter and broth, reduce heat to a simmer and cook until all vegetables are soft, about 12 minutes.

Using a hand blender, puree until smooth. Add 35% cream and continue to simmer for 5 minutes. Season with salt and pepper to taste.

Soup may be garnished with chopped parsley, chives or fresh chopped thyme.

Serves 8
INGREDIENTS
  • 2 tbsp olive oil
  • 11⁄2 lbs peeled, coarse chopped parsnips
  • 1 large spanish onion
  • 3 cloves garlic, coarsely chopped
  • 4 tbsp chopped fresh ginger
  • 1 large potato, coarsely chopped
  • 4 tbsp butter
  • 3 cup chicken broth
  • 11⁄2 cup 35% cream
  • Salt and pepper to taste

    I am interested in the name Irwin and see that the inn has been connected with the Irwin family for 3 generations.

    For many years my husband and I have been researching this name. We have traced the family from Scotland, to Ireland, Canada, USA, England and to Sri Lanka. Would it be possible to let me know where your family of Irwin’s are from?
